Habits of comfort.
Today the wind outside belies this sunny Sunday allure. It is bitterly cold once a blast of wind hits you. Winter weather of course.
Coming back from my afternoon round with the hound, I had this yearning for comfort food. Memories of Sunday afternoons filled with lovely pieces of cake resurfaced. Growing up in Bavaria it was a done thing to have coffee and cake on a Sunday afternoon. If not in a cafe somewhere, then at home with a slice of homemade delight. Oh, what fabulous memories.
So, the yearning for cake made me head to the kitchen. Bananas were about a day away from going over the edge of edibility ( paradoxically that is when they taste the best ), walnuts abundantly in the cupboard after an almost half priced deal at Lidl, and thankfully due to our vegan life no eggs or butter were needed to whip up a Sunday treat.
Banana and walnut muffins sounded like just the thing and after mixing sugar, bananas, flour, flaxseed and a bit of oil a most amazing little muffin ensued. Well a whole batch of them but due to popular demand said batch has shrunk!
These muffins did the trick and filled this Sunday afternoon gap and again made me realize just how easy it is to whip up a batch of batter for a cake. Bob likes the muffins and in his own mind is more than likely transported back to his childhood. A childhood with plenty of homemade cakes, cakes that were so yummy that he often includes the mention of either cakes or biscuits when telling me stories of his childhood. Baking, a nice way to sooth the soul...
